<h3>Rachel’s Review – qualia and Lizard Island</h3>

All were ‘firsts’ for me and landing on Hamilton Island, in the Whitsunday Islands, and boarding a chopper for a flight over the Great Barrier Reef and to Whitehaven Beach, was where I stopped trying to convince friends and family that I really was working very hard. Whitehaven Beach, named like so many Australian things, perfectly descriptively &#8211; Cape Tribulation and Tasty Cheese are two others that spring immediately to mind – is an immaculate strip of some seven or so kilometres that must have just been vacuumed. Touching down and stepping out was quite a moment. Sadly only a quick stop was permitted, just enough to get my toes wet and sandy (kindly brushed off by the pilot who took the “leave only footprints, take only pictures” adage seriously, or maybe he just didn’t want sand on the floor) before I was whisked away. Usually you’ll experience a beach picnic, an hour or so beachcombing and a swim. Flying low over the reef, the matrix of colours is formidable and the size of the reef more so. Heart Reef, aptly named (if you’re at the right angle, squinting and in a romantic frame of mind) was a highlight as were spotting turtles and rays from the air. Magical. </p>
<p>Landing directly at the resort of <a href="http://www.thetailor.com.au/the-tailor-collection/where-to-stay/by-state/queensland/qualia/"><strong>qualia</strong></a>, I took my golf buggy (the islands only permitted form of transport) and headed to the central Pavilion building. The entrance opened to a couple of steps, I warn you of this as I was so taken in with the view that I nearly entered this sophisticated resort on my face. The resort is built high on a rocky peninsula and the sun was just setting; several dense islands lay like dumplings in a stew and a lonely catamaran was gliding by – it was quite something and the reason for me not watching where I was going. Heading to my Windward Pavilion suite, I took in the rest of the resort &#8211; low slung buildings made of local timber and stone and every angle catching the breeze and presenting a different view of the surrounding islands. The sprawling suites with floor to ceiling windows, optional blinds (windows are blacked out to maintain privacy – I checked) are open plan with timber sliding dividers. The private terrace with day bed and private infinity pool faced the view and were the perfect place for a cooling dip after dinner. </p>
<p>Meals at qualia are an event. Food is light, fresh and healthy but you don’t feel as if you’re being too ‘good’. Seafood features prominently, wines matched if you need help and quirky touches and takes on classic favourites made the whole experience memorable. </p>
<p><img src="http://6531441c7c792896c836-a488bdb6264740f1acff0b443a056dea.r2.cf2.rackcdn.com/wp-content/uploads/2012/08/Lizard-Island-1.jpg" alt="qualia" title="qualia" width="300" height="200" class="alignnone size-full wp-image-6397" style="border: 1px solid #CCCCCC; background-color: #EFEFEF; padding: 5px; float: right; margin-left: 15px; margin-bottom: 95px;" />The final stop on my island taster tour was <a href="http://www.thetailor.com.au/the-tailor-collection/where-to-stay/by-state/queensland/lizard-island/"><strong>Lizard Island</strong></a>, just an hour’s light aircraft flight from Cairns. If you want an island directly on the Great Barrier Reef, where at the end of a sandy pathway lays the ocean hiding, just briefly until you don your snorkel, a myriad of aquatic life – boxes are ticked. The accommodation style is relaxed, rustic, beach chic – that’s white washed wooden panelled walls, polished timber floors, soft blue hues and white cotton in abundance to you and I. The obligatory day bed adorns the deck and the ceiling fans tick gently overhead. A wooden board walks linked this Anchor Bay Suite with the main lodge, where the bar and restaurant stays open all day. Meals take advantage (but not too much so) of the watery surrounds, however as the island is National Park, restrictions are in place so the opportunity for a kitchen garden are limited. Nevertheless, with twice daily flights, no one goes hungry and it certainly doesn’t curtail the imagination of the chef as the degustation menus and incredible beach barbeque proved.</p>
<p><img src="http://6531441c7c792896c836-a488bdb6264740f1acff0b443a056dea.r2.cf2.rackcdn.com/wp-content/uploads/2012/08/Lizard-Island-2.jpg" alt="qualia" title="qualia" width="300" height="225" class="alignnone size-full wp-image-6398" style="border: 1px solid #CCCCCC; background-color: #EFEFEF; padding: 5px; float: right; margin-left: 15px; margin-bottom: 45px;" />Lizard takes advantage of its location and with a dinghy available for you to explore the many beaches (there are apparently over 24) you can take a freshly packed gourmet picnic and maroon yourself for the day. Dive locations are plentiful and a dive in to the famous Cod Hole is easily accessible. Although these gigantic creatures haven’t been blessed with good looks, they are quite stunning in their own way. On dry land Lizard island has much to offer, a climb to the top of Cook’s Lookout, where Captain Cook once stood as he tried to plan his progress through the reef gives great perspective and allowed me to work off my various work related excesses and a visit to the Great Barrier Marine research centre blew my mind with the work that is undertaken by staff and students alike.  Lizard Island is, yes named after the creatures that populate it. They range in size from those tiny, scurrying away when they hear the thud of feet types, to muscly looking beasts that stare insolently then turn, flicking their tails before they sashay away &#8211; never had I wanted a tail more.</p>

<h3>Rachel’s Review &#8211; Southern Ocean Lodge, Kangaroo Island</h3>

Before anyone starts to accuse me of working for the Kangaroo Island Tourist board (or taking a back-hander), I don’t, I promise. There are the three main iconic sites of Australia, affectionally known as &#8220;Sydney, Rock and Reef&#8221;, however here at The Tailor; we like to think that we know a few lesser known charms to compliment these ‘Big Three’. Kangaroo Island or KI as it’s locally known is most certainly one of them. As I’ve been fortunate enough to visit several times, over different seasons I feel confident to say that it never, ever fails to enchant me. </p>
<p><img src="http://6531441c7c792896c836-a488bdb6264740f1acff0b443a056dea.r2.cf2.rackcdn.com/wp-content/uploads/2012/08/Southern-Ocean-Lodge-The-Great-Room.jpg" alt="Southern Ocean Lodge - The Great Room" title="Southern Ocean Lodge - The Great Room" width="300" height="200" class="alignnone size-full wp-image-6406" style="border: 1px solid #CCCCCC; background-color: #EFEFEF; padding: 5px; float: right; margin-left: 15px; margin-bottom: 35px;"/>KI is a 35 minute flight from Adelaide and this gives you just enough time to drink a glass of water and munch a single ‘Mentos’ mint, such is the sophistication of the inflight catering, and you’re down before you realised you were up. I was to be a guest at Southern Ocean Lodge and was looking forward to seeing what all the commotion was about. With accolades coming out of its ears and a location that seems to me, to defy logic as it was a bold architect and even bolder builder who created this lodge that hovers on the edge of a cliff with the Southern Ocean frothing at the mouth below. An hour’s drive from the airport and I’m making my way up a wooden boardwalk and pushing open huge double doors. Once inside I’m feeling perhaps how Harry Potter felt standing for the first time in the Great Hall at Hogwarts. Southern Ocean Lodge’s ‘Great Room’ is exactly that, great in all respects. An endless curve of glass draws the outside in, it was a cold day but the pendulum fireplace breathed warmth, the furnishings achingly simple but sophisticated, and above all you feel able to flop, relax and just stare out of the window, which is exactly what I did. </p>
<p><img src="http://6531441c7c792896c836-a488bdb6264740f1acff0b443a056dea.r2.cf2.rackcdn.com/wp-content/uploads/2012/08/Southern-Ocean-Lodge-Flinders-Suite.jpg" alt="Southern Ocean Lodge - Flinders Suite" title="Southern Ocean Lodge - Flinders Suite" width="300" height="200" class="alignnone size-full wp-image-6405" style="border: 1px solid #CCCCCC; background-color: #EFEFEF; padding: 5px; float: right; margin-left: 15px; margin-bottom: 35px;" />Having been winched out of my seat, I was shown to my suite, a ‘Flinders’. These suites are what is often categorised in the travel trade as ‘standard’, yet there is nothing ordinary about them. They manage to be spacious yet cosy; cool in that hip way that hasn’t (thankfully) resorted to theme or gimmick and, like all of the suites, they radiate style and detail. There are recycled spotted gum feature walls as well as commissioned artworks from local KI artists and each of the 21 suites has a private, uninterrupted and quite mesmerising ocean view. The only change in panorama is from the top ‘Osprey Pavilion’ located at the end of the lodge. This curved suite has a sunken lounge facing the ocean and a bathroom with vast granite bath pointing out over the wild bush land.</p>
<p><img src="http://6531441c7c792896c836-a488bdb6264740f1acff0b443a056dea.r2.cf2.rackcdn.com/wp-content/uploads/2012/08/Blog-SOL-2.jpg" alt="Southern Ocean Lodge" title="Southern Ocean Lodge" width="300" height="199" class="alignnone size-full wp-image-6458" style="border: 1px solid #CCCCCC; background-color: #EFEFEF; padding: 5px; float: right; margin-left: 15px; margin-bottom: 35px;"/>The lodge operates on an inclusive basis (with the exception of some fabulous special cellar wines) and therefore all meals, touring, wines, spirits, genuinely friendly service and hours spent gawping at the view and exploring it, are included. Following lunch, I joined Kate, one of the guides, for a cliff top walk. It was a blustery day and I found myself nicely buffeted, thankfully mainly inland, as the cliff edge is excitingly close (but not too close Captain Safety) and as I peer over the side the water froths beautifully. An hour or so later, my head is full of Latin plant names, bird species and a brief history of the island, all delivered with the self-depreciating sense of humour that Kate, like so many Australian’s, possesses. The rain arrived just as I returned to the main lodge, but this is where I think the lodge comes in to its own. Sitting in the Great Room, a glass of red wine in hand, I watched as the storm soldiered inland and battered the glass. Disappointingly it passed quickly but the scene was replaced with two wedge-tailed eagles riding the thermals and a perfect rainbow arc, so there were no complaints. </p>
<p><img src="http://6531441c7c792896c836-a488bdb6264740f1acff0b443a056dea.r2.cf2.rackcdn.com/wp-content/uploads/2012/08/Blog-SOL-3-Long.jpg" alt="Southern Ocean Lodge" title="Southern Ocean Lodge" width="300" height="450" class="alignnone size-full wp-image-6460" style="border: 1px solid #CCCCCC; background-color: #EFEFEF; padding: 5px; float: right; margin-left: 15px; margin-bottom: 35px;"/>Like many top lodges, dining at Southern Ocean Lodge is a very special experience. Everyone is welcomed for canapés and drinks before dining and as guests mingle, the staff share stories whilst mixing a mean gin and tonic (KIS gin no less, Kangaroo Island Spirits, a local boutique distillery) and the atmosphere, without wanting to sound as if I should have been drinking Pimms on the lawn at a garden party, was convivial and jolly. The menu changes daily and the emphasis on showcasing the regions finest offerings, which the chef did with style. Grain fed beef, king crab, and local snapper accompanied by the likes of KI samphire. There was a fabulous cheese plate, crammed with nicely stinking local offerings and a further desert featuring the intense local Ligurian honey. </p>
<p>An ideal way to work off the slight excesses is to explore the island or surrounds. A brisk beach walk from the lodge is one such way, or, as one third of the island is  Conservation or National Park you can really get up close and personal with prolific bird and animal species such as New Zealand fur seals, koalas, kangaroos (who would have thought?!), Australian sea lions, ospreys, echidnas and, I could go on…. Coupled with this, is of course that beautiful ocean and wide open unspoiled landscapes, shaped and moulded by the most underrated of sculptures, Mother Nature. I explored areas of the island I’d not seen before, a trek down to Admirals arch to see the most natural of ‘Sea World’s’ and a clamber over rocks named Remarkable. It all certainly was.</p>

Yes in my eyes it did, in bucket loads. I would go as far to say, that despite there still being many places on my bucket list, I would put a long weekend at Southern Ocean Lodge on Kangaroo Island at the top. No back hander required. </p>

<h3>Rachel’s Review – Sydney, Park Hyatt and Wolgan Valley Resort &#038; Spa</h3>
<p>As The Tailor’s newest recruit, I recently left my usual base of the Tailor’s UK office and under the thinly veiled disguise of work research I set off on a three week trip around Australia. From the Tailor’s Adelaide head office I traipsed across to Sydney and the Blue Mountains, then headed to Queensland to explore a handful of the state’s islands before finally heading to the Northern Territory. Here are a few of my highlights.</p>
<p><img src="http://6531441c7c792896c836-a488bdb6264740f1acff0b443a056dea.r2.cf2.rackcdn.com/wp-content/uploads/2012/08/Park-Hyatt-Sydney-Exterior.jpg" alt="Park Hyatt" title="Park Hyatt" width="300" height="200" class="alignnone size-full wp-image-6385" style="border: 1px solid #CCCCCC; background-color: #EFEFEF; padding: 5px; float: right; margin-left: 15px; margin-bottom: 35px;" />No visit to Australia seems to be complete without a visit to Sydney so this was a natural place to start. Having visited countless times, it still never fails to impress. Dominated by water, it curves and loops around the centre piece of Circular Quay, home to the Opera House and the ‘Coat Hanger’ – that’s the Sydney Harbour Bridge to you and I. This iconic view is one that many hotels capture and profess to offer the ‘best’ of. The <a href="http://www.thetailor.com.au/the-tailor-collection/where-to-stay/by-state/new-south-wales/park-hyatt-sydney/"><strong>Park Hyatt</strong></a>, in my opinion, offers this in bucket loads, and having just re-opened after extensive renovation and the creation of a floor of new suites, this iconic view is available to more lucky guests. Twisting out from under the bridge, the Opera House looms large from most of the rooms and suites. Despite having undergone total refurbishment the property has retained its original classy, fresh, understated elegance coupled with casual Australian style. </p>
<p><img src="http://6531441c7c792896c836-a488bdb6264740f1acff0b443a056dea.r2.cf2.rackcdn.com/wp-content/uploads/2012/08/Park-Hyatt-Super-Yacht-Ghost.jpg" alt="Park Hyatt Super Yacht" title="Park Hyatt Super Yacht" width="300" height="200" class="alignnone size-full wp-image-6386" style="border: 1px solid #CCCCCC; background-color: #EFEFEF; padding: 5px; float: right; margin-left: 15px; margin-bottom: 25px;" />There are countless options for exploring Sydney’s harbour; a short, sharp exciting jet boat ride, a sail boat or the way the locals do it – on board a motor yacht with a seafood BBQ, a cool box ‘esky’ of cold beer and wine and a kayak to explore the shallow coves. One of my favourite ways is to take the Manly ferry, one of the green and white commuter ferries that criss-cross the harbour every day. This time however, I was tasked with making sure that the super sports yacht Ghost was up to scratch. With four staterooms, a dining room, two outdoor areas and two lounge areas, I can assure you it is and the Manly ferry will no longer get a look in. I’ll confess that I didn’t actually leave the harbour (it’s not all fun and games), however when you do, your cruise will be tailored to you and you’ll be the envy of everyone. </p>
<p><img src="http://6531441c7c792896c836-a488bdb6264740f1acff0b443a056dea.r2.cf2.rackcdn.com/wp-content/uploads/2012/08/Wolgan-Valley-1.jpg" alt="Wolgan Valley" title="Wolgan Valley" width="300" height="200" class="alignnone size-full wp-image-6387" style="border: 1px solid #CCCCCC; background-color: #EFEFEF; padding: 5px; float: right; margin-left: 15px; margin-bottom: 55px;" />The Blue Mountains is treated by some as a day trip quick ‘tick box’, but it offers so much more. Granted the Three Sisters and Jamison Valley are stunningly beautiful, however if you want to scratch the surface, tickle your taste buds with a glass of (two, three ?) of wines from boutique vineyards and sample fresh farm to table cuisine, then go no further than <a href="http://www.thetailor.com.au/the-tailor-collection/where-to-stay/by-state/new-south-wales/wolgan-valley-resort-spa/"><strong>Wolgan Valley Resort</strong></a>. In three hours (slightly longer if you wish to take in the scenic ‘plus’ route) you think you’ve come to the end of the road as tarmac gives way to a gravel twisting track, this is the start of the descent in to the valley. Half an hour and a dusty face later (note to self to shut the window on the way back), I reached the gatehouse where I took the 4WD transfer to the main lodge – more gravel, lumps, bumps and a river to cross and I had arrived. An alternative, for those short on time, or simply if you want to fully appreciate the magnitude of this World Heritage National Park, is to take an hour’s helicopter flight. </p>
<p><img src="http://6531441c7c792896c836-a488bdb6264740f1acff0b443a056dea.r2.cf2.rackcdn.com/wp-content/uploads/2012/08/Wolgan-Valley-2.jpg" alt="Wolgan Valley" title="Wolgan Valley" width="300" height="200" class="alignnone size-full wp-image-6388" style="border: 1px solid #CCCCCC; background-color: #EFEFEF; padding: 5px; float: right; margin-left: 15px; margin-bottom: 25px;"/>The resort, set around the slopes of the valley, is dominated by a glorious take on an old outback homestead; albeit on a much larger scale and with an inviting (despite the cool temperature) infinity pool. Individual ‘cottage’ heritage suites are dotted around the resort, each one housing a large lounge area with working fire place, cosy bedroom, ensuite with spa bath and of course the ultimate in luxury, a private plunge pool. A long deck faced the valley and the original old homestead (infinitely smaller than the replica) and a couple of curious kangaroos completed the quintessential Australian scene.  </p>
<p>A stay at Wolgan includes different ways to explore its vast back yard. Mountain bikes are provided and there are marked hiking nature tracks, horseback trails or 4WD tours. Since much of Australia’s quirky wildlife is nocturnal and sunset was approaching, I chose to explore with one of the wildlife field guides. Back in the 4WD, we traversed the slopes, crossing the river in several places and then delved deeper in to remote parts of the valley. Wombats scurried around in the bush, wallabies sat bolt upright and engaged in a staring contest and the roo’s seemed to play chicken in front of the vehicle. Heading back to the homestead, a tasting menu was my choice for dinner. </p>

The kitchen philosophy is to source as much produce from a radius of no more than 160 kilometres. Every morsel was sublime (an over the top statement? possibly…but true) and each course matched by a local wine – the Logan Pinot, from Orange (130 kilometres away so scraping through that distance limit) to me was the winner, yet the icing on the cake was the cheese room. A heady delicious scent hit me at the entrance and the choices painful to make, I managed, just; although I had more than my fair share I’m sure, or maybe that was the waiter’s way of getting rid of me. </p>

<strong>Water Magic in Innamincka – An Australian Icon</strong></p>

In the week ending 9 February 2012, parts of Central Queensland recorded between 150-20mm of rainfall. Beyond these concentrations, rainfall was widespread throughout the state, with many areas west of the Great Dividing Range receiving at least 25mm in that week. This follows widespread rains throughout January, with extensive areas of central and western Queensland reporting 100-200mm rainfalls.  </p>
<p>Most of this water will end up in the Darling River. If the rain had fallen further to the west, it would have been another bumper year for Lake Eyre – after two successive years of high inflows, but right now, the lake is almost dry. Belt Bay, the deepest part of the lake, currently has less than 100mm of water and the level is dropping. The Warburton Groove, one of the major feeders for the lake, is dry, and only slight flood pulses have been recorded in the lake’s catchment. (however if further large rains fall on the western side of the great divide in the next 2 months the situation in Lake Eyre could change) </p>
<p>However at Innamincka, it’s another story. Located in north-eastern corner of South Australia, surrounded by the Strzelecki, Tirari and Sturt Stony Deserts, the settlement sits on the banks of Cooper Creek, and right now the creek is flowing, water is pouring over the settlement’s causeway and bringing with it an explosion of birdlife.</p>
<p>Innamincka is an Australian icon, set at the very heart of one of the most powerful and dramatic chapters in the annals of Australia’s exploration. It was here that the explorers Burke and Wills perished on the return leg of their journey between Melbourne and the Gulf of Carpentaria. East of the town, on Nappa Merrie Station, is the famous Dig Tree, site of the cache of food left for the starving members of the South-North Transcontinental Expedition.   </p>
<p>Dick Smith, the well-known adventurer, aviator and a passionate Australian, has nominated Innamincka as one of our most exceptional places – right behind the Great Barrier Reef. According to Dick, Innamincka and Cooper Creek have been a life-changing experience for him. </p>
<p>“When I was growing my business I used to get on a jumbo jet and fly over Australia and we’d be sipping our cocktails and I thought that was desert below me,” says Dick. “Then one day I went to Cullyamurra waterhole where Cooper Creek runs from Queensland into South Australia, and I camped there with the beautiful river red gums and the corellas in the trees and it’s just the most magical place. The water is 30 metres deep, it’s 10 kilometres long and it’s always got water, even in the worst drought. It taught me that if you’re flying over something it might look like an empty desert but when you’re down there it can be a magnificent area. I love Cooper Creek. In fact that original Australian Geographic Expedition that I organised to Coongie Lakes on northern Cooper Creek ended up saving it. It was made into a national park after that.”</p>
<p>For anyone who wants to experience a slice of the real Australian Outback, there is no other place quite like Innamincka – and no better time than now. </p>

David is the closet thing I have ever met to a real life Dr Dolittle. At his property Thylogale in the Daintree Rainforest of Far North Queensland, David takes a maximum of 4 people only, on a day to remember. The tour begins with a walk through his forest and from the very start it is “different”. When I did the tour we had only walked about 20 metres when a bird flew out of the forest and landed on his shoulder, – this was a definite “oh my god” moment! Then the forest seemed to come to life with wallabies, musky rat kangaroos and a myriad of birds as they came to visit their old friend David. David told me how he had sat quietly in the forest every day for almost 2 years to accustom the animals to him and now these wild creatures see him as part of the furniture. If you are travelling to the Cairns region and have even only a passing interest in the natural world you MUST do this as it will not be forgotten – imagine a cross between Sir David Attenborough, Dr Dolittle and David Suzuki and that is what you will get.</td>

Craig set the benchmark with his tour company in Australia and has been providing the best wildlife based private tours for over 20 years. I think what makes Craig’s operation special (and I have done about 20 tours with him) is the fact that every detail is so well thought through, from the training of his guides, reference books, vehicles, to the food, beverages and most importantly the itinerary. Craig’s company offers private access and many behind the scenes opportunities only a local could show you. If you want to see Australian wildlife in its natural habitat with a guide that is expertly informed and highly passionate – this tour is a must. Great Food and wine are also part of the deal and the surprise bush lunches are always a crowd pleaser. And if you are fortunate you will have Craig himself guide you (although all the other guides are great) and share his enthusiasm for his home.</td>

Anyone seeking an insiders view of Tasmania with a true local who can get you really behind the scenes – this is your man. A trip to his exclusive wilderness concession of 300,000 acres in the north eastern corner of the island state is a must.</td>

His highly personalised approach opens the door to the world’s oldest living culture. Sab has unrivalled access to some of the most stunning regions of Australia including Arnhemland and his knowledge of the breathtaking aboriginal rock art galleries of the Top End is unmatched. Sab’s unique approach gives the traveller an unrivalled insight into this ancient land. Sab took me to an ancient Tamarind forest (that felt like it had no place being there) planted by Moccasin trader’s centuries ago and it was a surreal experience as he explained how the traders harvested sea cucumber from the nearby ocean and camped in this spot for hundreds of years. Personally this is one of my favourite tours and guest feedback matches the claims. If you are looking for a real life Australian safari in some of the most spectacular Outback wilderness on the planet with the fascinating history of the world’s oldest surviving culture thrown in – then this is one to savour!</td>

With so much to do and see in Australia’s most famous city it is essential to have a well-informed local to show you and there is few more equipped to do that than Grant. A must do is a private sail on the harbour sipping a glass of chilled glass of wine and taking in the magnificent Harbourside mansions and views.</td>

A picnic and a snorkel is a must or simply just swim and enjoy the setting.

There is something very special about the first time you lay eyes on Uluru – it certainly leaves you with a sense of wonder not only about its magnitude and size but it has a presence and feeling that is hard to describe. I think you realise that it is truly ancient piece of Australia and will be there for millions of years to come. Sunrise at Uluru is a must along with table 131 with dinner under the outback sky. Staying at <a href="../../../../the-tailor-collection/where-to-stay/by-state/northern-territory/longitude-131/"><strong>Longitude</strong></a> is the only option in my opinion.

Staying at <a href="../../../../the-tailor-collection/where-to-stay/by-state/victoria/lyall-hotel/"><strong>The Lyall</strong></a> in hip South Yarra is a must and the restaurants in the area are all of great quality with a huge variety of choice. Plan a trip to the Yarra Valley or the Mornington peninsula but always go with a guide otherwise you will miss the secrets that only a local will know.

Always book a room that gives you access to the rooftop lounge because whether you are having breakfast or cocktails the lounge is the place to be. When in Sydney you must do at least 3 things these being. 1 Sail on the harbour 2. Climb the bridge – I know it is commercial but it is very cool! And 3 go to Bondi and do a surf lesson – I know Oprah did 2 of the 3 I will let you guess which one she skipped.

<p>I want to experience it through the eyes of the locals and get a deeper understanding of the country and the way it affects those that know it best – the ones that live there.</p>
<p>The Outback is at the heart of the Australian identity and as such is something that everyone should experience if they really want to discover Australia.</p>
<p>The following Outback Lodges are all owner operated, by passionate Australians who love their piece of paradise. All are vastly different in climate, landscape and offer unique insight into this wide brown land.</p>
<p>My choices are in no particular order.</p>

Ian Fargher your host will do and show you things that the normal traveller does not get to see. Like the time that one of his clients said I would die for a short black to which Ian replied no problem come with me. With that Ian took the client to his hangar (really a shed) and said to the client jump in the Cessna and they took off and flew to the Prairie Hotel landed the plane a few metres from the back door of the local pub, went in and had a coffee and were home within the hour. Experiences and stories like that can’t be scripted they just have to happen with special places and people.</td>

Whether you want to catch a giant barramundi, see a huge saltwater crocodile or just enjoy the stunning scenery this place has it all. One of the truly special experiences at Bullo is a trip to the cascades. The cascades are series of rock pools and waterfalls, high up in the escarpment of this 700 square mile property away from the crocodiles that flow from one to the next. The location is astonishing and the crystal clear water and total isolation make it even more spectacular. The trip to the cascades in the helicopter with Franz is jaw dropping on its own, but nothing prepares you for the beauty of the cascades. Most guests stay overnight and are left with a satellite phone, swag, gourmet BBQ and a star filled sky. Bullo is a property that with all the tricks ranging from, dramatic gorges, rivers, floodplains, extensive wildlife, aboriginal rock art, fishing, quad bikes, horse riding and a big welcoming smile. A must for anyone that is adventurous!</td>

Then one day he happened upon what is now Faraway Bay and he rang his wife Robyn and said I have found the most beautiful place I have ever seen. The rest is history, Bruce and Robyn created Faraway Bay so that others could share this untamed beauty. Situated only minutes from jewel of the Kimberley “The King George Falls” Faraway Bay is the perfect place to explore this rugged land. Blessed with incredible rock art, The King George Falls, endless beaches, superb fishing, spectacular rock pools and unlimited exploring there is simply no better way to see the Kimberley’s. I will never forget climbing the escarpment to the most idyllic natural rock pool you have ever seen and knowing that I would be only a handful of people top ever experience this. Then coming back to the lodge and eating mouth watering meals at the stunning Eagle Lodge. A must for anyone that wants to visit the Kimberley’s or just enjoy a true wilderness.</td>

Owners Graham and Jana Pickles along with farm manager Bill Royal are truly passionate about the property. The property is first-class all the way in terms of its accommodation, meals and activities along with the stunning location. I will never forget the Swiss clients we took to Burrawang who were concerned it wouldn’t be interesting enough! Well after 3 days riding quad bikes, seeing literally thousands of Kangaroos, canoeing the river and exploring the 14000 acre property they literally did not want to leave. A good recommendation with Burrawang is to do it at the end of your stay as it is always a highlight. When you arrive at Burrawang you know you are in the Outback but as one very well heeled New York client put it to me after visiting Burrawang “I sure do like the Outback, its not what I expected at all”.  A must for anyone travelling in a small group wanting something truly authentic and extraordinary!</td>

With only 4 rooms in the original homestead Stranraer offers intimate and very personalised service. I believe it is one of the best priced properties in Australia. I will never forget the time that Graham took us for a walk through the nearby bush and we were fortunate enough to see 6 echidnas together which is very rare. Stranraer is a must for anyone looking for superb food and genuine country hospitality with class at an affordable price.</td>

A laid back atmosphere in a highly sophisticated setting with understated opulence combine to create a truly world class experience. This is a MUST do for any Australian or International visitor.  This is a property that always meets and exceeds expectations.

Recently acquired by Delaware North they are reinvesting in the infrastructure to return it to a true showpiece of Australia.

				<content:encoded><![CDATA[<p>I love the Great Barrier Reef, every time you see it from the air you have to marvel at its size and beauty. There is a special feeling when you land in the tropics of northern Queensland and see the mango trees, sugar cane, palm trees and thick tropical rainforest. When you jump aboard a charter or scheduled flight and are heading out to the reef there is always a heightened sense of anticipation.</p>
<p>There is definitely something unique about spending time on a Great Barrier Reef Island. Maybe it’s the thought of relaxing for a few days and just soaking up the sun but I rather feel it’s because you know that you are spending time in one of the world’s most remarkable natural gifts, the largest coral reef in the world.</p>
<p>If you are going to visit the reef, which should be a must do on everybody’s bucket list then here are my choices are in no particular order.</p>

On my last visit to Lizard a quick snorkel in front of the lodge before evening drinks revealed 3 sea turtles within arm’s reach and a seabed littered with giant clams. Lizard Island became iconic in the late 70’s and early 80’s as the base for fishing the fabled giant black marlin. Names such as Lee Marvin, Jimmy Carter,  Ernest Borgnine and Jack Nicklaus were regulars in these waters and contributed greatly to putting the region on the map. Today the island has lost none of its lustre and is a must for anybody wanting to dive on the Great Barrier Reef.</td>

From the moment you walk through the entrance of the luxury property and see the awesome view you feel relaxation spread through your body. On my last visit I was fortunate enough to take the lodges private boat Atomic to the beautiful Whitehaven beach and cruise the islands of the Whitsundays. This is a day to truly remember from the great skipper, to snorkelling the pristine waters, a beautiful gourmet picnic on the beach and exploring the myriad of islands that dot the region. It seems one view outdoes the next &#8211; no wonder Oprah stayed on her recent visit. A day trip by helicopter to the reef is something to savour as you cruise above this natural spectacle until you land on the pontoon and see it up close. Qualia has many great features, including direct access by from most major cities in Australia. There is something special about the Whitsundays that makes it a place you vow to return to. With a list of activities as long as your arm including world class golf, diving, fishing and a superb spa this is place for those wanting some true R&amp;R in a setting to die for.</td>

A gorgeous beach, stunning villas combined with impeccable service. Bedarra is designed for chilling out in style! With only 16 rooms it is intimate and offers a feeling of truly getting away. On my last visit I will never forget the postcard beach we arrived at followed by a short walk to the impressive lodge and handed an ice cold towel and a tropical cocktail to sip – what an entrance! Bedarra offers great activities and you can dive the reef from here however it is designed as a haven for those looking to relax and unwind. This is the perfect spot for those looking to take a step back and enjoy wonderful service in an idyllic tropical setting.</td>

But if you are looking for adventure on a true island paradise then this place is like a dream come true. It has been called beach chic, rustic, Robinson Crusoe and more but it is just plain good fun. Owner Roy Turner is a real live Crocodile Dundee and adventure is his lifeblood, whether it being exploring world war 2 wrecks, diving with turtles, snorkelling the pristine reef, beachcombing, spotting crocs or fishing for Barramundi – Roy will have you on the go from the moment you arrive. I must admit this is one of my favourite spots in Australia and there are long list of A-listers that think so too. In the evening Roy cooks up some of the most memorable feasts you will ever see and the theatre of him cooking the freshest seafood combined with herbs and tropical vegetables all from the island is a site not forgotten. On my last trip to Haggerstone we flew by chopper to a secluded tidal river caught fresh barramundi and made beer battered Barra and washed it down with chilled French wine. This is something that you will remember for a lifetime. Likewise Roy pulled up the boat when we were on the reef and said just be a minute dived down and re-emerged with a huge painted cray (lobster) and preceded to cook it for us there and then on the boat. Its moments like these that make this place truly unique and for lovers of adventure this is a must. The location is indescribably beautiful, the reef incredible and with only 4 rooms why not rent your own island paradise! If you do you will never forget it and I guarantee you will return.</td>

Surrounded by tropical underwater marine gardens, seabirds and turtles this place will have you chilled out in no time. Great for groups wanting to experience tropical isolation in a setting straight from a national geographic documentary. You will sleep in designer inspired tents and superb staff will anticipate your every need – so why not take up the offer and rent the island!</td>
